Roasted Cauliflower with Tahini Sauce
Oh cauliflower, how we love you so! When it’s cooked the right way cauliflower makes some of the very best plant-based meals.
Before turning to the plant-based life it tends to get forgotten and relegated to not-very-interesting-often-overcooked status, but cauliflower is a true beast when cooked right and deserves to be front and center at least once a week.
And the sauce in this recipe takes the cauli to the next level. You can see it as cauliflower cheeses more sophisticated older sibling if you will. Super easy to throw together but oh-so very delicious. Enjoy!
Cook time = 30 - 60 mins (but your involvement is minimal!)
1 head of cauliflower
4 tbsp tahini
4 tbsp water
1/2 lemon (juice)
2 tsp soy sauce
2 tsp apple cider vinegar
1/2 tsp garlic powder
Serving suggestion: Quinoa, mixed leaf salad, toasted pumpkin seeds and pomegranate seeds.
