Smoky Sausage & White Bean Casserole

I don’t know about you but smoked paprika is just one of my favourite things EVER. It’s such a wonderful flavour. Thank you nature!

In this dish it combines with the rich flavours of the tomato, wine and garlic and the complexity of the other herbs and spices giving you one serious flavour ride.

I love this dish all year round. In the summer it’s perfect for alfresco dining with warm crusty bread and fresh salad, and in the winter it’s super warming when the nights are dark and chilly.

Cook time = 50 mins (most of this is in the oven so not time consuming)

Serves 4-6

Ingredients:

  • 1 tbsp smoked paprika

  • 2 tsp mixed herbs

  • 1/2 tsp cumin

  • 1 x onion

  • 4 x garlic cloves

  • 100ml white wine

  • 1 x tin chopped tomatoes

  • 1/2 tsp chilli flakes

  • 1 carton of white beans

  • 2 x celery stalks

  • 1/2 red pepper

  • 1/2 green pepper

  • 1 x stock cube in cup of water

  • 8-12 vegan sausages
